The last three weeks have been a little nuts, and while I haven't posted - I have taken photos here and there.  Thank you for sticking around, and peeking in on my little corner of the world!

It's almost laughable, the state of these photos. However, we are in the time of year where 2/3 meals are eaten in the dark.

Oat bran with brown sugar and blueberries.

Stir fry veggies, sweet chili sauce over jasmine rice.

Last night, I partook in a Taco Tuesday.  The hostess kindly provided fajita veggies, cactus, and mushrooms for veggie versions.  I contributed tortillas (both soft corn and hard shell).  I brought home a few leftovers from the evening, including pickled onions, guacamole, and tomatillo salsa.  I cooked up some Boca crumbles in taco seasoning, and picked up a few necessary taco accessories:
By Monday evening I was functioning at about 95% vocally. Now if only I can catch up on some sleep...

Get Ready

Heading back into the week, and not entirely well (although I'm on my way) - I restocked my tea cubbies for work. I wish I had seen Unknown's Throat Coat tea recommendation in time, but now I'll just pop in to Natural Grocer's tomorrow and see if they have any.  Here's what I currently purchased:
 Meal prep for lunches, for all five days included Tofurky Keilbasa with mixed veggies (to be served with couscous):
 And TJ's Stir Fry veggies with Sweet Chili Sauce over jasmine rice.

I haven't had a full on cold, but whatever is going on it has taken my voice. Really great for the classroom! I feel fine, otherwise.  While I stay quiet, I'll let my photos speak:

 Lunch: mixed greens, blueberries, candied walnuts, carrots, balsamic. Mini pitas, garlic hummus.

I spent $4 on this 2 ounce beverage, hoping to deliver a jolt to my system.

Day Trip & More

Saturday, I joined a few friends on a drive to Castle Rock (south of Denver) for a chat session and browse around The Barn.

Some treats from the weekend included this:
 And perhaps my best batch of corn chowder:
 Frozen corn (I used half of it), creamed corn, two small russet potatoes, three carrots, three celery, half of the onion, mild green chiles, and Upton's Bacon Seitan. Not seen above: veggie broth, almond milk, oat flour (to thicken), and lots of black pepper.
The chiles were a new addition, and it added just the right touch of heat. I definitely won't mind eating this six times!

Five inches of snow fell today, so it was enough to make things difficult, but not enough to cancel school tomorrow. Ha ha! Oh well. See you mid-week!

Thursday Thoughts

As we hear these horror stories of elementary aged children and healthy middle-aged adults succumbing to influenza this season and my own conversations with others about how we treat our fragile bodies, it has me thinking... If we are the result of our everyday decisions in the kitchen and where we spend our time, what am I doing to live my healthiest, longest life?

It is an answer I am still processing, and I'm curious to hear what you think.  In the meantime, here is an update on the supplements I've been taking to boost my system:
 Since August, I have faithfully taken Vitamin B-Complex. I think it makes a subtle difference in my everyday energy, but really have no way of knowing.  As an educator, I'll take Airborne on a regular basis during flu season (which means I'm good about taking it in the winter months).  Lastly, I take the magnesium supplement (Natural Calm) when I've had a stressful or emotional day, and need to slow down my nervous system. It's a sleepiness similar to melatonin, but the calm I feel is really key.  Some reviewers of the product take it regularly, but as I've had it less than 10 times in the last six months, I stick to the minimum dose recommended.

Here are today's meals:
 Bran flakes, almond milk, decaf coffee and hazelnut almond creamer. Vegetable soup (carrots, onion, garlic, celery, green beans, cabbage, tomatoes, tomato juice, veggie broth, spices) for lunch.
 Broccoli and baked potato with Tofutti Sour Cream.

Three Day Weekend

A photo for each day this weekend: Saturday's TJ run yielded a new purchase.
 Sunday's Roasted Butternut Squash & Shallot Soup: toss squash, shallots, and ginger in olive oil and season with sea salt. Roast in the oven for 50 minutes at 350 degrees. Add 2 and 1/2 cups of Not Chicken Broth to a blender with the roasted items. Yum!
Monday's PB waffle, as the snow falls outside (it won't amount to much, perhaps an inch, but I enjoy spending the day cozy and warm!).
