Pumpkin bread (it's a little dry - I used applesauce instead of oil, and in the future I'll do half of each.)
Pumpkin Latte with Almond milk:
 Leftover Cuban Black Beans from last week, asparagus and rice pilaf.
My neighbor from a few doors down made a huge pot of vegan & gluten free tortilla soup, and wanted to share.  I added some Garden of Eatin' Guacamole Tortilla Chips and a quinoa-garbanzo salad.

Almost Autumnal

We experienced cold weather briefly, but have been living in the upper 70s the last week. Those temperature swings have started turning the leaves....
 Which means, I want toast (avocado on peasant loaf slices)
 And homemade pumpkin bread:
Which means I have to nearly die in my workout classes, so I can still eat it:
 But then, it doesn't matter anyway when I go to happy hour and order the seasonal punch (apple whiskey, cinnamon liquer, and I don't remember the rest.)

Meal Prep Mania

I'm leaving behind lunchtime sandwiches for the foreseeable future, and that means: Sunday night meal prep!

 Group 1: asparagus, tomato, and shallot sauteed over rice pilaf.

Group 2: Cuban Black Beans with broccoli and couscous.

I have more than I need for lunches this week, so it might show up with a twist in my evening meals.  It's a crazy week, but I intend to post on Wednesday or Thursday! I hope you've had a great weekend!

Double Time

I'm including my weekend pictures with today's, as I fell into the AP English abyss of essay editing on Sunday - as this was their first major essay of the year, I promised to shred their writing and therefore had to deliver heavy marks on grammar, syntax, diction, et al.

As Summer Exits...

I'm not sad to see summer go.  It broke up with me six weeks ago, so as far as I'm concerned - see ya! ;)  The problem with Colorado is that we only have two seasons: summer and winter.  Spring is usually one week, and autumn... for about four days.  Our first snow is usually in October, but on the rare event - we've had a quick storm in September.  I really hope we can actually have a fall season this year! Nonetheless, I made sure to squeeze out a little more summer this weekend.

Farmer's Market visit (only two weeks left for this one! Other markets will go into October.)
 End of the season peaches, green beans, tomato, and zucchini. Huge bunch of kale, and organic cilantro.
Mixing the cold brew with hot water and coconut creamer is just as delicious.
Adventures in pizza: this was my second one, with sauce, spinach, and not enough Daiya mozzarella (I found that after baking- more cheese! I have one crust left, so I'll try again. In the future, I'll make my own crust. This is like a thick cracker.)
I think this will also be my last week of sandwiches and tacos, so you can look forward to seeing them one last time. Ha ha! I hope you've had a great weekend, see you soon!
